Some amazing information about raw sauerkraut: One Tbsp raw sauerkraut contains the amount of probiotics in an entire bottle of most probiotic supplements.

1 TBSP fermented vegetables averages approximately 800 million bacteria, but sauerkraut kicks that way up:

Lacto fermenting also appears to increase vitamin C content about 20x what it is before fermenting.  Red cabbage has 30mg per cup but fermented increases that to 600-700 mg/cup or  is smaller servings, 30-40 mg per Tbsp!
